Smokers, for cooking.

I like to smoke most of the meat that we eat. There is just something about that hickory smoke smell that just says its time to eat! We also process all of the deer that we take every year and the smaller smokers just dont cut it when its time to smoke 30 logs of sausage. We have 2 smokers, the smaller one is for cooking dinner for the family, the larger one is for parties, deer and if we get to go hog hunting this year, pork.

thats a nice setup youve got. I also like to smoke. i havent dove into smoking sausage yet, just done some deer steaks and roasts. and ribs. I dont have a picture of my smoker right now, but it is the stack type. the kind you put charcoal in the bottom and there is a water pan that goes on top of it then two racks and a lid on top.
it was free, or else i wouldnt have got it, its kindve a pain.

One of the best smokers I have ever had the pleasure of eating from was an old whiskey barrel stacked type. There was a pan in the bottom sitting on bricks for the charcoal, water pan above that and then two grates for cooking on. That thing churned out the best tasting meat I have ever had. Must be something about the whiskey soaked oak that adding something else to the flavor.
